Bone Broth Recipes

Perhaps you've heard of the "Bone Broth" thing going around these days. Some say that the green smoothies are passé and bone broth is the future healthy diet. I don't know about that, but I'll keep drinking my green smoothies daily and add bone broth to my diet and I'll see how I feel. This is the only real test of these things, how do you feel?
The first question you might have is, what is the difference between stock and bone broth? Chicken stock for example is made with various chicken parts and cooks for a couple of hours. Chicken stock typically isn't made with vegetables for flavoring because it's used by chef's and home cooks as an additive to recipes. Chicken bone broth on the other hand is made with lots of vegetables and slowly cooks for 24 hours. The end product tastes like really rich chicken soup, but is loaded with vitamins, minerals, calcium, glycogen and collagen and much more.

The benefits of bone broth can improve digestion, allergies, immune health, brain health. Additionally, bone broth can help reduce cellulite by improving connective tissue, increase hair growth/strength, improve digestive issues and remineralize teeth. There a lot going on here, so my wife and I are going to add this to our diet for 3 months and I'll report the findings in January of 2016.

I've made chicken bone broth 3 or 4 times now and I realized real quick that I needed larger kitchen equipment, thank goodness for Cash and Carry. If you've never been there, it's a northwest restaurant supply chain open to the public. I was able to get a 16 and 12 quart stock pots so when I make bone broth, I can make 10 quarts which is enough for 2 people for 10 days. 

Ingredients:
12 pounds chicken thighs (Cash and Carry)
1 whole chicken
3 pounds carrots
3 stalks celery
1 large yellow onion quartered
2 garlic cloves
1 large beef steak tomato quartered
1 teaspoon peppercorns
2 bay leafs
1 teaspoon salt
